This may be a valid solution to eventual sovereinty. As you've pointed out, it won't be easy to achieve nation status because countries are unwilling to give up sovereinty even if they are willing to sell land.
Co-opting an existing country may be possible through non-violent means. A small island nation might be willing to give citizenship to wealthy, productive individuals -- especially if they come complete with homes, greenhouses, desalination, and electrical production. As the most productive part of the society, gaining political control of the country might be possible. If not, a large enough citizenry with established political differences, splitting off from that country and appealing to the UN for recognition is a possibility. The gotcha is probably that once you are a citizen, the country might claim all your property -- including the sea-stead you rode in on.
